Sitting exposed at the top of the Itata coastal range, Eliana Sanhueza's extremely steep, rocky vineyards are constantly buffeted by the Pacific's cooling winds, fostering a long, slow development of complexity in her 60-year-old+ plots.

The vineyard

We say “100% Pink Muscat” because in reality, there are at least three different varieties of pink grapes

The first is a natural mutation of Muscat of Alexandria that has been replanted over centuries in Itata. It’s ripped, juicy, acid-driven, and with none of the sometimes overbearing soapy, über-floral aromatics associated with its parent plant.

País Más País

Why 'País Plus País'? Well, the País tasted really, really good, so we decided to add more.

País Más País, a.k.a. País plus País, is Vino Potable’s answer to Claus Preisinger’s Puszta Libre or the low-ABV, vin-de-soif version of Partida Creus’s MUZ

These low temperatures mean that the wine wild-ferments at an achingly slow rate, preserving an insanely juicy feel. Only 20 PPM sulfur added at bottling.

North-facing vineyards are planted at 161m above sea level on granitic soils

Located in Pellines, Itata, Don Omar's País is co-planted with Muscat of Alexandria, Torrontel, and a bit of Semillón. All vineyard management is manual, by hand and by horse.

The vineyard

Is País the Americas’ most Americas grape? If the metric is that it’s been here for five centuries, the answer needs to be yes

Hyperbole aside, as with all vineyards in Itata, their age and the fact that massale selection is alive and well mean that no vineyard is monovarietal.

País Más País is mostly País with a bit of San Francisco, or ‘la uva manzana’ as it’s known locally: the ‘apple grape’ because of its size and crunch.

Colombian by birth and Chilean by rite of winemaking, Laura's first vintage came in 2023: complex, seductive, and fruit-forward wines made from responsibly cultivated grapes.

Both naturally and culturally, Itata is a garden of wine: five centuries of family-tended vineyards have yielded vines that are globally unique in their ability to produce healthy natural wine.
